Ideally, I would add a strip or 2 of walnut to create accent stripes on my canoe but I can't find any walnut without knots.
So.....I was thinking about painting a 1" wide stripe along the length of the boat instead.
I'm thinking it would be best to paint on top of the fiberglass and then varnish over it ?

any thoughts ?

It would be better to use a water based walnut colored stain directly on the wood. Water or Alcohol based stains are compatible with epoxy. You can also use an analine dye directly on the wood and cover it with fiberglass & epoxy.

BTW we do have clear walnut full length strips.
