I need to make a new spacer/fairing piece between the depth finder head and the hull of a fiberglass sailboat hull. What would be a good material to use. Plywood doesn't seem to last too long.

Marine plywood or solid mahogany will usually last at least 10 years, and works well with bedding compounds. If you want to extend that apply several coats of epoxy before the block is installed.
