I am planning to build Danny Greene's nesting dinghy "chameleon". Okume etc is rather expensive. How would mahogany ply work? Is it flexible enough?

Meranti Mahogany is harder, stiffer and about 20% heavier than Okoume, but 6mm and 9mm should bend well enough for your dingy.
