You can epoxy the gunwales but two things to consider are Ash is a hard oily wood so not as easy to get a good bond as with the cedar. If you use a lot of clamp pressure the epoxy will be squeezed out of the joint and it can fail. Second is if you ever have to change the gunwales it will be easier if they are screwed.
