    Why bother? Modern CAD/CAM design and production mean that parts can fit so closely that there is no need to pull them together with wire ties - especially if the parts are laser or router cut to an accuracy that we cannot match with our jigsaws or bandsaws.
    AND - wire ties have to be pulled.
    AND - stitch and tape was devised to utilise FRP tape and polyester resins (which are poor adhesives, even on plywood). Why not throw away the ties, throw away the polyester resin and use epoxies - with some tape where needed, but otherwise making nice fillets at all the joints. No fastenings, no problems.

    Stitch and glue boats are usually made with out forms.

    If you try to glue two pieces of plywood together you quickly run out of hands.

    it is important to have no twist to the lines of the yak. with the wires loose you can tighten them up where needed to have a straight boat. this would be next to impossable if you just tried to tape it together and epoxy it.

    'sides, if'n you get it too technical ya take away the thrill of building. If ya want it all that close why not just buy a storebought and be done with it.
