Question Strength of Plywood with Epoxy

I have been contemplating building a stitch and glue duck boat. The boat will be use mostly in the fall, and will be required to break through some thin ice that forms over night in late November.
I am worried that the ice will damage the epoxy and allow moisture to get at the wood. The plan I am looking at requires the hull be made of 3/8" Okoume BS1088 or BS6566, covered 50? wide 6oz fiberglass cloth, and coated with 3 layers of epoxy (WEST System or equivalent.). Should I use a heavier weight of Fiberglass cloth?
    Thanks
    Tim

6 oz cloth and epoxy is pretty tough, but if the extra weight is not an issue, 10 oz would be insurance.
