I'm searching for a simple way to measure and cut the angles so the ends of the seats fit neatly against the hull. The boat is a cosine wherry.

Take a wood block and drill a hole in it so that it will hold a pencil. Then, put a piece of scrap wood where the seat will butt up against the side of the boat. Slide the block with the pencil in it around the scrap board, and the contour from the side of the boat will be transferred from the side of the boat to the board. (the block rides on the boat and steers the pencil...). Go all the way around your scrap board (you have to go all the way around to get the right angle on the ends), and you'll have traced the line you need to cut out...Now just transfer the lines you made to the real seat, cut it out, and it should fit like a glove.
