Research. There's a section in James Moran's book "Building Your Kevlar Canoe" that discusses canoe design - flare, tumblehome, length, width, bottom shape, symmetry, ends, depth, etc.

If you design your own you will have to have a cross sectional pattern at intervals along the lenght of the canoe. The difficulty in designing your own is getting the lines fair. I had similar ideasat one time, but old time designers I spoke with indicated it was time consuming to get it right.
I overcame the problem by developing software to mathematically design a canoe. Still working on it (I call it Kanoe), but I can now design 209,000 combinations of shapes exclusive of the dimensions. It takes about 10 minutes to ddesign a boat. I have built 4 of the designs and the boats have been great performers.
